This recipe contains far less calories and carbohydrates compared to the traditional Tropical Pork Kabobs.
Ingredients
Pork
1 ½ pounds lean pork tenderloin, cut into 2 to 3 inch cubes
Marinade
- 2 tablespoons pineapple juice concentrate
- 1 tablespoon minced ginger
- 1/3 cup water
- 2 tablespoons lime juice
- 2 tablespoons dark rum
Procedure
- Place the pork cubes in a plastic zip-top bag
- Combine all of the marinade ingredients. Add to the pork. Let the pork marinate for several hours.
- Thread six 8- to 10-inch skewers with the marinated pork. Grill 6 inches from the heat source for about 10-15 minutes, rotating the skewers. Make sure the pork is completely cooked through (there should be no traces of pink).
