Chipotle Smashed Sweet Potatoes

This is a revised version of a recipe from Alton Brown. Warning- this is HOT HOT HOT! The chipotle pepper adds so much flavor that you won’t even miss the salt! I love the sweetness the brown sugar adds and the cilantro gives it some color!

Fill pot about 1 inch with water and bring to a simmer. Put cubed potatoes into steamer basket and place steamer into a large pot of simmering water. Steam potatoes for 20 minutes or until they fork tender. Add margarine and brown sugar to the potatoes and mash. Add peppers and continue mashing to combine. Stir in cilantro. Serve immediately.
