Ingredients
- 2-cups of fresh broccoli florets
- ¼ cup golden raisins or dried cranberries
- 1/8 cup chopped pecans (or walnuts, etc)
- 1/2 cup sliced mushrooms-optional
- 1/4 to 1/2 cup red onion-cut up--optional
Directions for Broccoli salad
Mix together and add dressing below:
Ingredients for dressing:
- ½ cup low fat mayonnaise
- ¼ cup Splenda (or could use fructose)
- 2 Tbsp vinegar
(Can use different types of vinegar, such as red wine or apple cider vinegar)
Directions for overall recipe:
Mix together all three ingredients, adding more of vinegar if needed, according to taste. Pour over broccoli mix. Let it chill for at least 1 hr for best flavor!
